Why This Recipe Works

Roasting brings out the natural sweetness of beets while creating beautifully caramelized edges and a tender texture. Fresh lemon juice and zest brighten the earthy flavor, while thyme adds subtle aromatic notes. Toasted pistachios provide a satisfying crunch along with heart-healthy fats, making this simple dish feel fresh, balanced and full of seasonal flavor.

Storage Tips

Store leftover roasted beets in an airtight container in the refrigerator for up to 5 days. Enjoy them chilled in salads, grain bowls, or wraps, or gently reheat before serving. Add the pistachios and fresh herbs just before serving to maintain their texture and freshness.
