For the plant-based yogurt sauce: ½ cup plain unsweetened plant-based yogurt, 1 tablespoon fresh lemon juice, 1 tablespoon chopped fresh parsley or dill, 1 small clove garlic (finely grated), and a pinch of sea salt.

How to Make the Baked Sweet Potato Bowl
Preheat the oven to 400°F. Pierce each sweet potato several times with a fork, place on a baking sheet, and roast for 40–50 minutes, until tender.
While the potatoes bake, combine the lentils and water in a saucepan. Bring to a boil, then reduce the heat and simmer uncovered for 18–22 minutes, until tender but not mushy. Drain any excess liquid.
